Leftover Smoked Turkey Chowder

My husband and I discovered this recipe after having way too many Thanksgiving leftovers and getting sick of eating the same thing for days on end. By giving it a different format and introducing stock, it had all the flavors of the smoked turkey dinner but was visually unique so we could trick ourselves into thinking it was something new. I loved the way the mashed potatoes added a silky texture and how it came together as a chowder. Besides, you can’t freeze mashed potatoes; they just get grainy! Please enjoy.

Sauté onion until translucent.
Add carrots and celery, and cook until soft.
Add garlic and stir for 30 seconds.
Add herbs and stir for 30 seconds.
Add stock, turkey, and mashed potatoes. Bring to a boil.
Reduce heat and simmer for 30 minutes to an hour.
Et voilà! Serve with crunchy bread, then take a nap.</span-p>
