I need assistance designing an ice cream shop. I am trying to fit both ice cream processing and retail sales into a fairly small 1000 sq. ft. location. This is in California, so has some strict design requirements and may be too complicated for an online job but thought I would try. I am really trying to figure out a basic layout to make sure all of the equipment will fit into the space and still have enough room for retail sales.

The space is currently a free standing office building on a slab foundation which will need interior walls, additional plumbing, electrical and specific sections for the preparation of the ice cream as well as another kitchen area that will be used for mixing and baking all other foods (cookies, brownies, etc...)
The Clean Room: This is an important part of the facility and we would like it to be visible to the retail space if possible. I will supply a list of equipment and their dimensions. The clean room will be approved by the CA Department of food and Dairy. Requirements Attached. Basically it is a room where only the dairy products can be processed. No other food may enter and it must be sealed off from the rest of the kitchen. It will even need it's own ventilation.
The Kitchen: It must meet the requirements of the County health and safety department. It should not need a Hood, but will require a 3 compartment sink, work space, floor mixer, refrigeration, and freezer space. I will include a list of required equipment.
Retail space: What ever space its left after kitchen, clean room and storage will be used for the service counter and customer seating area. I have a list of equipment for this area as well, but major features are a service counter, ice cream dipping cabinet, cookie display, rear wall work space and floor area for seating and standing room for customers.
Floor drains and grease interceptor will be needed. 220v power will be needed throughout the building.
I need a walk-in cooler and freezer. This will take up a minimum of 100 sq feet. I am trying to find an off site location for additional freezer space.
The existing ADA restroom will probably need to stay in it's current location.
We will only be utilizing the front half of the building. This is represented on the drawing as the large empty space with bathroom (not the other half with the divided offices.
