Functional Nutritionist for Smoothie Bar Menu Development – EU Health Claims Experience Required

I am launching a premium functional smoothie bar in Cyprus targeting health-conscious urban professionals aged 25–40. The brand positioning is elevated functional wellness. I am looking for a qualified and registered nutritionist or dietitian to lead the development of an initial menu of 6 drinks: 4 functional smoothies and 2 protein shakes. What I am looking for: The ideal candidate will have: - Proven experience developing recipes for food businesses, cafés, juice bars or similar - Strong knowledge of functional ingredients and nutraceuticals eg. lion's mane, collagen peptides, and hyaluronic acid - Familiarity with EU Regulations on nutrition and health claims - The ability to deliver full nutritional breakdowns per recipe (calories, macros, key micronutrients) - Experience advising on allergen flagging and dietary variants (dairy-free, vegan) - Excellent written and spoken English Project Scope: Deliverables include: - Menu concept development across 4 health benefit categories: Skin/Beauty, Energy & Focus, Gut Health, and Immunity (4 smoothies) plus Recovery Protein and Breakfast Protein (2 shakes) - Ingredient combination guidance including suggested quantities per serving - Functional booster recommendations and dosages per recipe, with EU claim considerations - Full nutritional analysis per drink (calories, macros, key micronutrients) - 1–2 health benefits identified per drink suitable for menu boards and packaging - Allergen identification and dietary variant suggestions (dairy-free, vegan) - Review of applicable EU nutrition and health claims - Written nutritional information suitable for labelling and staff training - Attendance (virtual) at one tasting session following first draft delivery to provide recommendations on flavour, texture, and functionality - One round of recipe adjustments following the tasting Nutritional Parameters: - Serving size: 475ml per drink - Calorie range: 200–400 kcal per smoothie; maximum 450 kcal per protein shake - Sugar: maximum 20–30g per serving from whole fruit only, no added syrups, juices, or artificial sweeteners - Protein shakes: minimum 20g protein per serving - Non-dairy milk as consistent base across all drinks — please recommend the most suitable option - No ice, no artificial sweeteners or additives - Mix of fresh and frozen ingredients - Drink profiles will be shared with the selected candidate Practical Considerations: - Smoothies are made to order at point of purchase - Fruit and ingredients stored frozen where applicable.
