Illustrator work + some tutoring

Need help turning the different greens into editable objects/layers in illustrator and someone to show me how you did it and how to edit the colors. I'm very technical and experienced with photoshop but not illustrator. need to send out this image for a tshirt for a side project today Id like to limit the colors to 5-6 shades of green. I also want trillium kurabayashii written in cream below it under the right leaf and Dancing Oaks Nursery above in the same cream, as seen on the very unfinished piece attached this comes from a friends drawing i've attached the goal.png of what we want this to look like (roughly) on a tshirt and a WIP illustrator file that might be useful we need the flowers to show up on the red backgroun so thinking they should be outlined in the green but this is beyond my illustrator skill
