Manually Scrape Data From a PDF into a Google Sheet

This task needs to be completed between 24 hours of this posting. I have a set of 20 technical diagrams in PDF format. need someone to review each one and manually record all of the text in a spreadsheet. I need this work done because I am writing software that automatically extracts this text from the PDFs. And I want to use the manually extracted text to validate that my auto-extraction program is working. Please see the attached example screenshot of one of these diagrams.I want all of the text that appears anywhere in this diagram recorded in a Google Sheet, regardless of what orientation the text is in. For instance, the text might be sideways. My company has similar kinds of manual projects from time to time. If you do a good job, we will likely want to use you on other projects.
