Odoo Email Customization and Routing

We just migrated to Odoo and we have some customizations we need help with. Mainly controlling who gets what email and when. For instance, delivery order email notification are nice, but if an order is delivered directly vs via UPS we want messaging to be different, we also want to prevent pick-up orders from being sent an email that says their order was shipped! We have a custom field that can be used to make the automation. We need a date filter preset that is current week mon-sat. Odoo does not have this by default. I would also like to get user permissions set right. Currently I can't seem to give people enough permissions to do their job without giving them full admin rights. In general, we could use a go-to odoo expert to help us as issues pop up!
