Typesetting - Document Layout

I have a 160 page report in the form of a Google Doc, that is formatted and chapterised that I would like laid out professionally in a formal business report style. I'd like the document to have a clean, minimal yet elegantly layout, with full consideration given to the use font, spacing and positive and negative space. This is not simply a case of chucking by doc into indesign as is and then sending back an in design file. Because the content is essentially just words (no diagrams or illustration) the type layout needs to provide the "design production value" e..g. Each Chapter page should have full page typogrpahy lead design. Pull quotes become a design feature in the page etc.
