Commercial Protein Bar Recipe Development

I'm searching for a recipe developer to assist me in development of my protein bar/flapjack concept. The aim is to create an all-natural protein bar/flapjack with 600 calories and 30g protein. I have developed a recipe that meets these requirements, however, there are textural issues with the bar. Without baking, the bar ends up sticky and droopy. While baking leaves it dry and crumbly. Ideal texture would be similar to that of a soft baked oat bar (if baked). If not baked, then soft and chewy similar to quest protein bars. The objective of creating this recipe is to start off with small scale production and scale up to large scale commercial production (bonus points if you have connections to relevant manufacturers).
