WordPress WooCommerce Customizations Needed Including UI and UX

We are an education company in need of someone to focus on our UI and UX for cart, checkout, and payment processing of - One-off courses that we offer guest checkout for - Subscriptions that we don't offer guest checkout for We want to offer ApplePay and GooglePay. We have setup our Stripe Payments to accept them. But, during the checkout process they are not displayed. The person we are looking for is someone who has already had experience in customizing the WooCommerce payment processing and has had specific experience and success with customizing the ApplePay and GooglePay features so that our customers can flow through our checkout smoothly and without confusion. Very important will be to have our entire checkout process smooth and clear on both mobile and desktop.
