I build the Shopify work that most theme developers hand back: gated B2B wholesale catalogs, market specific pricing and gift logic, multilingual storefronts, and app level work on the Admin API. Most of my clients keep me on a monthly retainer instead of a one off project, because the work is usually continuous: a market launch, then a conversion problem, then a performance issue. How I work I take 20 to 25 hours a week, so I run two or three active clients at a time and I do not oversell my availability. I scope work into tickets before I start, one commit per ticket, and I test on a duplicate theme before anything reaches your live store.
