Most documents I see are not wrong so much as disconnected from the product. The policy names a lawful basis the product does not rely on, forgets half the vendors that touch user data, or promises deletion the system does not perform. The Terms are often lifted from a US template and quietly unenforceable against European consumers. I read your documents against what your product actually does, and I tell you which gaps would stop a launch or a security review and which ones can wait.
You get either a written risk review or direct edits in tracked changes, so nothing changes in your documents without you seeing it. Work is done by me, not delegated, and I answer questions myself.
