I did this to my own site, so I know exactly where it goes wrong.
My portfolio went down because the managed database provider paused its free tier - and my app treated "database unreachable" as "no data", so it served an empty page for days instead of an error. A silent failure. I moved the whole thing off Vercel and Supabase in one day: PostgreSQL and the Next.js app on my own server, nginx and Let's Encrypt in front, deploys reduced to a git push.
What you get is the same thing, done carefully. I do not switch DNS until the new server is proven: both run side by side, and I check row counts against the source before anything is trusted. If something is wrong, we roll back - the old setup stays untouched until you say otherwise.
Everything lands in your name: your server, your database, your domain, your repo. I leave a written runbook so your next developer can take over without calling me.

I map what you are actually running: services, env vars, cron jobs, storage, and what depends on what. You get a written plan and a rollback path before anything moves.
Move, verify, then cut over
New server built, database restored with row counts checked against the source, app behind nginx with TLS. Both run side by side until the new one is proven, then DNS switches at a time you choose. Handover: backups, deploy-on-push, runbook.
